Lola Berry’s Avocado Dream Boat Smoothie

Celebrating throughout the Christmas and New Year period can often leave us feeling depleted and a little worse for wear.

In the spirit of kicking off 2020 mindfully and looking after yourself from the inside out, this smoothie from nutritionist Lola Berry could be just the thing you’re looking for.

“I know avocado smoothie sounds weird, but trust me, it will make your smoothies the best consistency ever. Plus your body will soak up the avo’s amazing fibre, vitamins and healthy fats,” tells Lola.

 

Ingredients:

1 avocado

1 frozen banana

2 tablespoons extra-virgin coconut oil, melted

80 g (2 cups) baby spinach

vanilla pod, split and scraped (use 1/2 the pod)

500 ml (2 cups) coconut cream

2 tablespoons desiccated coconut

2 tablespoons coconut nectar

Topping:

1 tablespoon shredded coconut

a drizzle of coconut nectar (can use maple or honey in its place)

a few fresh berries

 

Method:

Pop everything into the blender, then blitz it all up, top with sunflower seeds!

Serves 2
